① Clean the crab: Use a soft brush to gently scrub the shell and claws under running water to remove mud, algae, and any impurities.
② Method 1: Arrange the crabs in a steamer: Place them neatly with the shell facing upward to preserve the roe and flavor during steaming.
Method 2: Steam for 13 minutes once the water boils: Keep at medium heat until the shells turn bright orange-red and release their signature aroma.
③ Serve: Remove from the steamer, arrange on a serving plate, and enjoy with ginger and black vinegar for enhanced flavor.
🍴Alternative Method:
After cleaning, place the crabs in cold water, bring to a gentle boil, and steam for about 15 minutes until fully cooked and evenly orange-red.
Note: Avoid placing crabs directly into boiling water — the sudden heat can cause claws to break and affect the dish’s presentation.
Crab Storage Instructions
Keep the crabs at a temperature between 6–12°C in the refrigerator’s cool compartment.
Cover them with a damp cloth to maintain moisture, ensuring they stay fresh and lively until cooking.
